Rockin' Jimi Hendrix Thai Chicken Curry!

TIP: **This is the perfect blend of sweet, savory & spicy!!**

Ingredients

**Put on your favorite Jimi Hendrix song & start cookin'**

    Prep the veggies & chicken (cut into strips) and set aside.
  2. 2
    Over medium heat, combine coconut milk with curry paste & blend well.
  3. 3
    Add fish sauce, chicken broth, brown sugar, lime juice and garlic.
  4. 4
    Bring to a boil, reduce heat & simmer for 2-3 minutes.
  5. 5
    Add in ALL remaining ingredients (Except the Broccoli & Yellow Peppers)
  6. 6
    Continue to simmer uncovered for 10 minutes, stirring occasionally
  7. 7
    Add Broccoli & Yellow Peppers, simmer an additional 3-5 minutes

    Serve over y9our favorite white rice

Mom's Classic 4 Bean American Chili

TIP: **This is an easy dinner recipe that you can put together in not time but, it tastes great....thanks MOM!!**

    Combine all ingredients into a large pot.

    Bring to a boil.

    Reduce heat and simmer for 15 - 20 minutes (stirring occasionally).

    Serve hot with corn bread (if desired).

Pollo Lucas Tacos - Crazy Chicken Tacos!!

**GREAT CINCO DE MAYO RECIPE**

Lucas is slang for crazy in Spanish and it is also the name of a sweet-and-sour seasoning that is used on everything from fruit to candy and is even sometimes used to rim the glass of beer in Mexico. Here it is used in an unusual way- the flavoring for grilled chicken. It is a bit spicy so adjust to your own tastes. The time does not include the time to marinate the chicken. This recipe is adapted from Baja: Cooking on the Edge.

    In a nonreactive bowl, combine the chicken, lemon juice, salt, oregano, garlic, and oil; mix thoroughly. Refrigerate for up to 4 hours.

    To make the Lucas spice: Stir together the ground chile, sugar, and salt in a small bowl. Set aside.
  3. 3
    Half an hour before cooking, clean the grill thoroughly with a brush and wipe it down with an oil-dampened rag. Preheat the grill on high. Grill the chicken on both sides and then dust lightly with the spice mix. Grill 2 minutes more on each side.

    Remove to a platter. Cut into thin strips or dice.

    To serve, smear some beans inside a tortilla. Stud with the chicken and top with a small amount of guacamole and pico de gallo.

    Note: The chicken may be roasted instead of grilled.

Authentic Filipino Chicken Adobo

    Into a medium large saucepan, put 2 cups of water, chicken (or tofu--see note), onion, garlic, soy sauce, vinegar, cooking wine, and sugar.

    Bring it to a boil.

    Add the spices and simmer 5 minutes.

    Add the vegetables and cook until tender.
  5. 5
    Thicken the sauce with the cornstarch mixture.

    Serve with steamed rice.

Terriyaki Hamburgers (Easy & Fun to Make)


TIP **This is a nice variation to the classic hamburger**

    Combine the first 6 ingredients and shape into patties.

    Cook patties in a large skillet over medium-low heat 20 minutes, turning once.

    Serve on buns with lettuce, tomato and mustard.

I love Japan!! It's always been one of my favorite places in the world. The culture is so captivating & the people are so kind. There is an inexplainable peace in the midst of daily life. If you haven't been yet, put it on your list!!




Vegetarian Quiche

TIP: **This can be served hot or cold & makes an excellent main dish served with a side salad or fresh fruit for brunch**

    Saute onions, peppers, and mushrooms in one tbsp butter or margarine over medium heat for 10 minutes.
  2. 2
    While vegetables are cooking, toss cheese and flour together.
  3. 3
    Combine eggs, milk and seasoning and mix together.
  4. 4
    Add cheese and vegetables to egg mixture and mix well.
  5. 5
    Pour into greased pie dish and bake at 375 degrees for 45 minutes.

    Let stand 30-45 minutes before serving.

    Serve with orange slices and toast

Korean BBQ - Bulgogi ^_^

TIP: **You can also serve the beef with large lettuce leaves & make little beef wraps. This is the traditional way of enjoying Korean Bulgogi**

Ingredients

  • 1 1/2 lbs boneless rib eye steaks, cut into very thin slices 5-6" long x 2" wide (I use Black Angus)
  • 4 teaspoons sugar
  • 1/4 cup soy sauce
  • 3 cloves garlic, crushed/chopped fine
  • 3 scallions, cut into 1-inch pieces
  • 1/4 teaspoon pepper
  • 1 teaspoon korean sesame oil

Directions

    Mix beef& sugar, let rest 2 minutes, then add remaining ingredients.

    Toss well and let stand 1 hr at room temp or overnight in the refrigerator to allow the meat to absorb the flavors- It's better the longer it marinates!

    Preheat a large, skillet over moderate heat for 2 minutes.
  4. 4
    Add beef, a few slices at a time, & cook without oil for 2-3 minutes at most.
  5. 5
    Serve immediately with white sticky rice and an assortment of side dishes.
